Tofu Rice Paper Spring Rolls
Ingredients:
- Four Elephants Rice paper wrappers
- Firm tofu, thinly sliced and baked
- Rice vermicelli noodles
- Lettuce leaves
- Carrots, julienned
- Cucumber, julienned
- Fresh cilantro leaves
- Dipping sauce (soy-lime or peanut)
Directions:
- Soak rice paper wrappers in warm water until soft (about 30 seconds).
- Place a sliced tofu on the wrapper, followed by a small amount of noodles, carrots, cucumber, mint, and cilantro.
- Roll the wrapper tightly, tucking in the sides, to form a spring roll.
- Serve with dipping sauce.
