Thai Green Curry
Ingredients:
- 1 can Four Elephants Organic Coconut Milk (available on Amazon)
- 2 tbsp green curry paste
- 1 lb chicken breast, thinly sliced
- 1 cup bell peppers, sliced
- 1 cup eggplant, cubed
- 1 cup bamboo shoots
- 1/2 cup Thai basil leaves
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 1 cup chicken broth
- 1 tbsp vegetable oil
Instructions:
- Heat the vegetable oil in a large pan over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.
- Add the chicken slices and cook until they are no longer pink.
- Pour in the Four Elephants Organic Coconut Milk and chicken broth. Bring to a simmer.
- Add the bell peppers, eggplant, and bamboo shoots. Simmer for 10-15 minutes until vegetables are tender.
- Stir in the fish sauce and palm sugar, adjusting to taste.
- Remove from heat and stir in the Thai basil leaves.
- Serve hot with steamed jasmine rice.
