Thai Green Curry Recipe

Thai Green Curry

Ingredients:

  • 1 can Four Elephants Organic Coconut Milk (available on Amazon)
  • 2 tbsp green curry paste
  • 1 lb chicken breast, thinly sliced
  • 1 cup bell peppers, sliced
  • 1 cup eggplant, cubed
  • 1 cup bamboo shoots
  • 1/2 cup Thai basil leaves
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 1 cup chicken broth
  • 1 tbsp vegetable oil

Instructions:

  1. Heat the vegetable oil in a large pan over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.
  2. Add the chicken slices and cook until they are no longer pink.
  3. Pour in the Four Elephants Organic Coconut Milk and chicken broth. Bring to a simmer.
  4. Add the bell peppers, eggplant, and bamboo shoots. Simmer for 10-15 minutes until vegetables are tender.
  5. Stir in the fish sauce and palm sugar, adjusting to taste.
  6. Remove from heat and stir in the Thai basil leaves.
  7. Serve hot with steamed jasmine rice.
