Filipino Chicken Adobo with Coconut Milk

Ingredients:

  • 1 can Four Elephants Organic Coconut Milk (available on Amazon)
  • 2 lbs chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 cup water
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil

Instructions:

  1. In a large bowl, marinate the chicken thighs with soy sauce, vinegar, garlic, bay leaves, and black peppercorns for at least 30 minutes.
  2. Heat the vegetable oil in a large pan over medium heat. Add the marinated chicken and cook until browned on all sides.
  3. Pour in the marinade along with water and bring to a boil.
  4. Lower the heat and simmer for 30 minutes until the chicken is tender.
  5. Stir in the Four Elephants Organic Coconut Milk and brown sugar. Simmer for an additional 10 minutes.
  6. Serve hot with steamed rice.
