Filipino Chicken Adobo with Coconut Milk
Ingredients:
- 1 can Four Elephants Organic Coconut Milk (available on Amazon)
- 2 lbs chicken thighs
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1 cup water
- 6 cloves garlic, minced
- 2 bay leaves
- 1 tsp black peppercorns
- 1 tbsp brown sugar
- 1 tbsp vegetable oil
Instructions:
- In a large bowl, marinate the chicken thighs with soy sauce, vinegar, garlic, bay leaves, and black peppercorns for at least 30 minutes.
- Heat the vegetable oil in a large pan over medium heat. Add the marinated chicken and cook until browned on all sides.
- Pour in the marinade along with water and bring to a boil.
- Lower the heat and simmer for 30 minutes until the chicken is tender.
- Stir in the Four Elephants Organic Coconut Milk and brown sugar. Simmer for an additional 10 minutes.
- Serve hot with steamed rice.
