Vegetarian Rice Paper Spring Rolls


  • Rice paper wrappers
  • Vermicelli noodles
  • Lettuce leaves
  • Carrots, julienned
  • Cucumber, julienned
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Dipping sauce (hoisin or peanut)


  1. Soak rice paper wrappers in warm water until soft (about 30 seconds).
  2. Place a lettuce leaf on the wrapper, followed by a small amount of noodles, carrots, cucumber, mint, and cilantro.
  3. Roll the wrapper tightly, tucking in the sides, to form a spring roll.
  4. Serve with dipping sauce.
